You’re not a bum – I didn’t mean that.
What I meant was that the keto diet takes a lot of work and carb counting. You can’t just munch on a hunk of bread when you feel a bit peckish. You also have to skip the wine and pasta, and the toasted reubens, and the bag of potato chips, the buttery popcorn…the list goes on.
So, you want snacks that you can access easily without a lot of prep, and that satisfy the requirements of a keto diet. Heck, even if you’re not following a strict keto diet, or any diet for that matter, it’s always useful to have some low-carb, nutrient-rich snack ideas up your sleeve.
I’m Thai, that makes me a bonafide super snacker by nature, so it’s imperative that I have good snack smack on hand at all times. And since I must share snacks with my little dog, Gin, it’s critical those snacks are healthy, wholesome, and free from crap.
Back to the snack.
Sure, it’s easy enough to walk into any supermarket and just buy a log of low-carb protein goo, but you’re going to be dealing with additional ingredients that serve to preserve. My motto is that a little effort goes a long way.
When you start with fresh, wholesome ingredients, you not only save the planet from a lot of unnecessary waste (such as single use plastic and foil wrappers), you also enjoy better tasting food with full disclosure on what’s in it. That’s certainly worth the effort!
My Power Up Almond Butter Smoothie is a reason to get out of bed in the morning. Not only does it meet my requirements for taste and food combinations (and I’m a self-identified picky eater), it’s also loaded with nutrient-dense ingredients, including a superior homemade almond butter. You can make it in a snap too! All that makes it one of my favorite recipes with almond butter.
Before we dive into the recipe, I want to address a big burning question out there: can you eat almond butter on a keto diet? Short answer––YES! And if you want to know more about it, check out my post, Nuts n’ Seeds For Keto Please!
So, without further adieu, here is my not-so-secret recipe. Note the variations so you can create your own custom version.
Berries are low on the glycemic index, so they’re suitable for the keto diet. If you don’t care about carbs, throw in a banana for extra smoothness.
If you do care about carbs and still want that creamy texture, throw in half an avocado (but beware ladies, avos are high in histamines so best avoid them during the second half of your cycle).
(for Keto-Conscious & Could-Care-Less-About-Keto Folks)
¼ cup Frozen blueberries
¼ cup Frozen strawberries
1 handful Baby spinach or kale leaves
1 tbsp Soaked chia seeds
1 tsp Cacao powder
1 tsp Maca powder (or ashwagandha)
1 tsp Moringa powder
1 generous tbsp Zippilicious Almond Butter
¾ cup 100% natural, unsweetened Almond milk
Optional:
1 banana or ½ avocado
¼ cup natural, unsweetened yogurt (goat, cow, or coconut)
Instructions
Add all ingredients to a high-speed blender and pulse for several minutes until it reaches a smooth consistency.
Pour into a cup and chug-a-lug, making sure to chew slightly as you drink.
Alternatively, pour the smoothie into a bowl and top with sliced fruit, nuts, granola, and other keto-diet killers.
